Baked Salmon with Mayonnaise and Capers

So I finally cooked dinner tonight! I got this recipe from my grandma Carol. I always try to learn her recipes whenever we go over for dinner because her food is sooo yummy! You can also make this dish with mahi mahi, but I prefer it with salmon! When I was younger, I would always pick out the capers because I thought it was gross, but now I love it! If you never had capers, it tastes kinda tangy n salty. People usually use capers as a seasoning or garnish. They are a distinctive ingredient in Italian cuisine. Hope you like it!

Baked Salmon with Mayonnaise and Capers

Ingredients:
  • Salmon
  • Mayonnaise (enough to cover the top of the salmon)
  • Capers (as much as you want)
  • Lemon Juice (a splash)
  • Garlic- 1-2 bulbs (we like it with 2)
  • Pepper
Directions:
-Season salmon with pepper
-Mix Mayo, lemon juice, garlic & capers in a bowl
-Smother over salmon
-Preheat oven to 350 degrees
-Bake for 20-25 minutes (until salmon is flaky, do not overcook!)

*Line pan with foil for easy clean up

School Supply Labels!

Sorry I haven't added any new recipes lately. Been guilty of eating out the last couple of nights because we've been so busy. One thing we had to do was get everything ready for my baby to start school.
We went to buy her school supplies and ended up having to go to multiple stores to get everything she needed! I suggest you call ahead to see if they have the supplies you need so you don't waste your time going all over the place like we had to do. The school requires you to label literally all of her supplies, so I decided to make labels. Here is a short tutorial on a fast and easy way to make them online.

Things you will need
  • Address Labels
  • Printer
Directions
-Go to this website: http://enu.print.avery.com/SelectSku
-Click on "Address labels" (try to look for the size of the one you have)
-Select a design (I use the "basic design" because it lets you upload your own images)
-Select "Quick & Simple"
-Upload the picture you want & type in the information you want your label to say (for the smaller labels I selected "no image")
-Select your font, size & color
-Review your labels, checking for any errors
-Click "Print Your Project"

These are the labels I made :)

Mini Cheesecakes

Here's a recipe for individual mini cheesecakes. You can make them plain or top it with whatever you're in the mood for. I usually bring this to parties or make this when our friends come over. My friends and I never have a bbq without dessert! hehehe

Ingredients:
  • 1 Box of Nilla wafers or Oreos
  • 2 (8 ounce) packages of cream cheese, soften
  • ½ cup white sugar
  • 1 tsp. Vanilla extract
  • 2 eggs
Directions:
-Line muffin tin with cupcake liners, placing 1 cookie in each liner
-Mix cream cheese, vanilla and sugar with an electric mixer on medium speed until well blended
-Add eggs & mix well
-Pour even amount over each cookie
-Bake at 350 degrees for 12-15 min.
-Refrigerate

*If I use the Oreos as the crust, I top it with chocolate pudding and cool whip & if I use the Nilla wafers as the crust I top it blueberry pie filling n cool whip! (Make sure you let it cool before topping it)

Ahi Katsu

Ahi Katsu is Chad's favorite thing to eat at Jurisons, a bbq restaurant in Waikele. Once when we had a huge slab of ahi (that they caught on a fishing tournament) he decided to try and make ahi katsu out of it. It came out really good and everyone loved it, so we've been making it ever since! The cooking time depends on how you like to eat it. I personally like mines well done so I fry it a little longer, but if you like it raw in the middle like how most people prefer to eat it you just sear the outside.

Ingredients:
  • Ahi (cut into thick slices)
  • Nori
  • Panko (seasoned with garlic salt & pepper)
  • Eggs (scramble in a bowl)
Directions:

Roll ahi in nori

Dip it in egg, then in panko

Heat oil, then fry

Slice into smaller pieces

Enjoy!

*Chad likes to dip it in Shoyu & Wasabi for extra flavor...but I personally HATE the taste of Wasabi so I pass on the sauce!

C.A.A.D.D.

I read this online a while ago and loved it! It's definitely a must read!! I think I might have this disorder...LOL!

CHILD ACTIVATED ATTENTION DEFICIT DISORDER (C.A.A.D.D.)

“I decide to do the laundry. As I start toward the basement, I notice that there are cheerios all over the floor and my house keys are in the cereal bowl. I decide to pick up the cheerios before I do the laundry. I lay my keys down on the counter, put the cheerios in the trash can under the counter, and notice that the trash can is full. So, I decide to take out the trash. But then I think, since I’m going to be near the mailbox when I take out the trash I may as well pay the bills first. I take my check book off the table, and see that there is only one check left, my extra checks are in my desk in the office, so I go to my desk where I find a sippy cup full of juice. I’m going to look for my checks, but first I decide I should put the sippy cup in the refrigerator to keep it cold. As I head toward the kitchen with the sippy cup a plant on the counter catches my eye–it needs to be watered. I set the sippy cup on the counter, and I discover baby wipes that I’ve been searching for all morning. I decide I better put them back in the bathroom, but first I’m going to water the plants. I set the wipes back down, fill a container with water and suddenly I spot the TV remote, left on the kitchen table.I realize that when I go to watch TV, I will be looking for the remote, but I won’t remember that it’s on the kitchen table, so I decide to put it back in the den where it belongs, but first I’ll water the plants. I splash some water on the plant, but most of it spills on the floor. So, I set the remote back down, get some paper towels and wipe up the spill. Then I head down the hall trying to remember what I was planning to do.

At the end of the day: the laundry isn’t washed, the bills aren’t paid, there is a warm cup of juice sitting on the counter, the plants aren’t watered, there is still only one check in my check book, I can’t find the remote, I can’t find the wipes, and I don’t remember what I did with my keys.
Then when I try to figure out why nothing got done today, I’m really baffled because I know I was busy all day long, and I’m really tired.”
